Our commitments

Because we are lucky enough to be located in an exceptional terroir, in the heart of a natural valley dominated by the Pic Saint-Loup, we have chosen to honour and preserve this richness. Organic farming, hand-picking and sustainable winemaking allow us to put this generous nature to good use in the quality of our products.

ORGANIC CULTURE

"To give back to the vine all that it brings us, by being as respectful as possible, seems to us to be a fair return of things".

Preserving our planet and limiting the impact of viticulture on our environment is essential. Mas de l'Oncle has always positioned itself as an authentic and committed estate, honouring nature and the terroir.

Since 2016, this commitment has been officially recognised by obtaining the "Organic Agriculture" environmental certification, valid for all our wine ranges since 2021.

Our grapes are grown without any chemical products: no pesticides, herbicides, chemical fertilizers or GMOs. Our winemaking methods are also recognised, with the use of organic yeast and the minimum possible use of sulphites.

We thus produce living wines, which express each vintage and reflect the richness of the environment from which they come.

HARVESTING

In order to guarantee the natural expression of our fruit, we choose to pick most of our grapes by hand.

This traditional method, practiced by only 10% of the vineyards in the world, allows us to protect the vines, sort the bunches at harvest time and limit the crushing of the grapes. We only harvest our best fruit to offer tasty and expressive wines.

WINE MAKING

At Mas de l'Oncle, we have put in place moderate vinification processes in order to always offer the best from our vines.

- The vinification is carried out in small capacity vats (40 to 100 HL only) in order to favour the good maceration of the berries.
- The grape varieties are vinified separately. This allows for a certain complexity in future blends.
- The vatting period varies from 2 to 6 weeks. We do not seek maximum extraction, but rather finesse and fruit.
- The devatting is entirely manual: without pumping, the marc is transported by belt to the press.
- Our different vintages are then matured. The Denis, Jules and Sélection cuvées are aged in barrels, while the Plaisir Blanc, Plaisir Rouge and Élégance cuvées are aged in vats.
