Hand-picked in crates, sorted in the vineyard and in the cellar. De-stemming, vatting by gravity, regular pumping over in order to extraction and to respect the aromas and the quality of the tannins. Vatting time: 25 to 30 days.

Garnet colour, slightly amber, which suggests that there has been a long and meticulous maturing of this wine. A spicy, slightly minty nose that suggests a wine of character with structure in the mouth. This wine is smooth and spicy with elegant but pronounced tannins. A wine for meals par excellence.

You can pair this wine with dishes in sauce such as gardianne de taureau, or a rooster stew. Play on the spices with a lamb braised with thyme and 3 peppers.
